Kuaiji pot

Kuaiji is an antique white-washed Chinese pot used for rice wine fermentation. The pots were originally used in rice wine breweries where they stood outside during winter while the wine was being fermented. This method of producing rice wine has been used for over 2000 years and is still used today in Shaoxing, China. The characteristic white-wash on the pots comes from the storage of the wine, when they were chalked white to regulate the temperature. The pots have been used several times and this means that all the pots have different signs of usage. Some even have a stamp from the brewery.
